The TMI Chapel at Pilot, Strawberry Plains Pike, Knoxville, TN. is creating a Trucker's Cookbook for Over the Road Truck Drivers.  We are requesting driver's to share his/her favorite recipes with us.  The entry is to included the equipment used, the recipe, and any story that might accompany said recipe.  Send the recipe and accompanying information to This email address is being protected from spambots. Here is one recipe:

Goulash

 

1/4 of a polish sausage sliced up

1/4 small head of cabbage cut up

2 potatoes quartered

1/2 onion cut up

about 1/2 cup baby carrots

one small can of tomatoes about 4 oz

 

Equipment - Road Pro crockpot

Put everything except the polish sausage in the crockpot along with about 1/2 cup of water and let cook on low for about 4 hours then add the sausage and cook another 4 hours.  I prepare everything at home (Knoxville, TN) and put them in Ziploc bags and put bags in the truck frig.

 

We picked up in Memphis, TN around 8:00 am.  Then stopped about 10:00 am for a short break.  I put everything in the crockpot on Low  except the sausages.  Then about 2:00 pm, I added the sausage.  When we stopped for supper in NC at 6:00 pm supper was ready.  We even shared some with another driver.
